The base for curry for 2 people


For the mixed spice:

  • 1 tbsp coriander powder
  • 1 tsp cumin powder
  • 1 tsp turmeric powder
  • ½ tsp paprika
  • 1 heaped tsp garam masala
  • 1 tbsp of tomato puree
  • 1 tsp of chilli powder (or to taste)
  • Mix all the above ingredients together to make a paste then add enough water until it is a thick creamy consistency.

1 large onion or 2 medium onions finely chopped

2 inches of fresh ginger, grated, minced, or finely chopped

4 cloves of garlic, grated, minced, or finely chopped

2 tbsp veg oil of choice



Heat the oil in a pan

Add the onions with salt and cook until beginning to soften

Add the garlic and ginger. 

Heat together stirring all the time for 3-4 mins (add a little water if it gets too dry or begins to catch). 

When the oil rises to the top add enough water to make into a thick gravy.

The sauce is now ready for you to add your leftover turkey, meat or vegetables, or can be cooled and kept in the fridge for 2 – 3 days or frozen to be used later.
